The key to understanding these issues is simply this: the government says that seed oils are good and animal fats are bad, therefore the inverse is true. The truth is derived by applying this formula: government’s position = 1/truth.

I wouldn't get too fearful about seed oils... in another 10 yrs they'll be finding it isn't so and all this latest scare mongering will be thrown out. I've read several articles on our need for it.... I believe Dr Kane did quite a bit regarding the cell membrane. Maybe it's best to just eat the seeds and not process anything. But as always, all things in moderation.

You can make glue from grain flour, rice flour and others but that doesn't mean we shouldn't eat them. Material chemists can do a lot with base products.

My article here was very short. If you want to know more details there are others who go into it. Grain flour, rice flour etc.. isn't exactly healthy either, it's just something that people like eating. There may be health benefits for linoleic acid, but I doubt that's so for the highly processed, hence rancid and treated with deoderizer stuff which is what I am talking about in the article. I did say processed cooking oil. Not expeller pressed.

What is the difference? I’d truly like to know. Also, if baking is the healthier way to do so, bearing in mind moderation?

I am not really an expert. I can only tell you that I don't buy any cooking oil. I even make my own mayonnaise with avocado oil. I save bacon grease or other drippings. I replace any cooking oils in baking recipes with butter. I just melt the butter first. i am not sure if I answered your question. Let me know.
